Favorite Summer Snack: Ceviche

Summer is in full swing since releasing some of our favorite summer picks I had to share our favorite summer dish! It is a fan favorite, and beloved in our family get togethers and loved by friends. Our summer Ceviche! You wot regret trying this!

This is the most refreshing, light but filling healthy snack you can hope for. We make it weekly just because the heat here in AZ is NO JOKE and it is refreshing and yummy to snack on after the pool! I double the recipe every time because it never seems to be enough! IT is simple to make easy to keep in the refrigerator for the weekend.

INGREDIENTES

  • Your favorite Tortilla Chips

  • 1 LB Raw Shrimp

  • 1 Mango

  • 5-8 juiced limes

  • 3 large Juiced Lemons

  • 1/2 medium red onion

  • 1 Cucumber

  • 1 jalapeno

  • 1-2 navel Oranges

  • 2 -3 roma tomates OR 10 OZ’s Cherry/grape Tomatoes

  • 1 Bushel of Cilantro

  • 1 tbsp Italian Seasoning

  • 1/2 Tsp Salt

  • 1/2 Tsp Pepper

INSTRUCTIONS

  1. clean remove shell and de-vein the shrimp. This is a must! if you don’t de- vein it will cause a weird taste ( shrimp poop isn’t good).

  2. once cleaned and prepped remove excess water and cut shrimp in to bite size pieces ( usually one shrimp in 4’s)

  3. Next Cut and juice limes & lemons. you can juice directly over the shrimp or into an container. ( depending on how much juice your produce you may need more limes. When you add your juice you want the shrimp to be covered in juice) Once combined place in the fridge for 20 min while the shrimp cook. The shrimp should have and opaque white to them to know they are done

  4. Now is time to chop all the rest! Chop onion in to really small pieces. ( you want the pieces to be small for maximum flavor in a bite )

  5. Peal three strips off the Cucumber slice in to small bite size pieces. ( you want the pieces to be small for maximum flavor in a bite )

  6. Chop tomatoes in to small bite size pieces. ( you want the pieces to be small for maximum flavor in a bite )

  7. Peal and cut Mango into small bite size pieces. There is a cool trick for this god to the Tips Section.

  8. Peal & chop orange in to small pieces ( you want the pieces to be small for maximum flavor in a bite )

  9. Cut & remove seeds from the Jalapeño cut into small pieces ( you want the pieces to be small for maximum flavor in a bite ) If you want more spice add another jalapeño or a Serrano if your feeling spicy!

  10. Dice your cilantro and last but not least cut up your avocado.

  11. Combine all the ingredients to the shrimp after the 20 min and add salt, pepper & italian seasoning. AT THIS POINT DETERMINE IF THERE IS ENOUGH JUICE IF NOT ADD ANOTHER LEMON AND LIME. You’d want there to be enough juices and not be dry. Refrigerate for at least and hour the longer the better! and ENJOY with your favorite Tortilla chips! or my Favorite Sweet potato chip.

TIPS|

  • When cutting the fruit be sure to make them small pieces! you want every bite to have just about everything on your chip!

  • Use gloves to cut the Jalapeño your eyes will thank you later!

  • Our local grocery store makes fresh tortilla chips Daily! these are our favorite!
